One down, thirty to go

on January 1, 2013

Time to share with you guys what  ate on my very first day of veganism! I would like to point out that not once, but twice today (with a hint of a tear in my eye) I had to turn down cake.

Breakfast: Coffee with soy milk (meh), chocolate cheerios with almond milk (also, not amazing),

Toast with cashew butter and banana (winner! so good!)

Snack: fruit salad, walnuts, dried fruit

Lunch: Seared seitan sausage (yum!) with olives and tabouli, Pita with edamame hummus. Coconut milk ice cream for dessert.

Snack: Broccoli with vegan sour cream dip. Fresh pineapple. 

Dinner: Cashew and banana toast again! I love it! 

I will probably eat something more before bed. Overall I am pretty pleased with how the first day went. Tomorrows projects: Making cashew cheese (!) and making Tofu tostadas for dinner. Also hopefully yoga or the gym. I’m getting a hair cut too, so a full and fun day!

    Sounds great! Stick with it – you’ll feel fantastic! Is it just for 30 days?
